How to Make Split Biscuits
Ingredients
- 3 large Irish potatoes
- 1 yeast cake
- 1/2 cup butter
- 1 tablespoon sugar
- 1/2 cup shortening
- 2 teaspoons salt
- 2 cups warm milk
- Bread flour to make sponge and to knead, about 11 cups
- 2 eggs
Directions
- Pare and boil potatoes. Mash.
- Add the shortening and eggs.
- Dissovle the yeast in the milk and add to the other ingredients.
- Sift 3 cups of flour and add to the mixture.
- Allow dough to raise until it is light.
- Add salt and sugar and enough additional flour to knead.
- Allow the dough to rise again.
- Roll out dough 1/2-inch thick. Cut into flat biscuits.
- Brush tops with melted butter and place them together in pairs.
- Bake on a greased pan at 375°
